Putting Coating back on knife?

I got a really nice Hand Forged Damascus knife for Christmas. After a while I decided I might try to shine it. This turned out to be a bad idea. I thought maybe the lines would just show up better, but there was some coating on the knife that made the whole thing darker. After shining a good portion of the knife, I found that I had actually given it a duller look. Was it some coating I ended up pulling off? and is it possible for me to put it back on. I used Noxon Metal Polish.
